Bunny Quiche
Spring has sprung! And what better way to celebrate than with some wonderful Easter recipe inspiration. Here, leading children’s cookery author and food expert Annabel Karmel shares her latest cracking collection of Easter favourites for the whole family to get stuck into!

MINI BUNNY QUICHES

These delicious yet simple savoury creations might even tempt the most dedicated of chocolate fans away from the egg hunt! Get little ones helping to decorate by adding the bunnies’ ears, eyes, nose and chive whiskers.

MAKES: 8 QUICHES

Ingredients

  • 8 mini tortilla wraps
  • Olive oil
  • 2 onions, chopped
  • 50g spinach
  • 10 cherry tomatoes, quartered
  • 75g mature Cheddar cheese
  • 1 tsp fresh thyme, chopped
  • 2 eggs
  • 150 ml double cream
  • 150 ml milk
  • 2 tbsp basil, chopped

To Decorate

  • Carrots, chives, peas

Annabel Karmel's Bunny Quiches

Method

  • Preheat the oven to 180C Fan. Heat the oil in a frying pan. Add the onions and fry for 5 minutes until soft. Add the spinach and fry until wilted.
  • Line 6 ramekins with tortilla wraps. Spoon in the onion and spinach mixture into the bases.
  • Divide the tomatoes and cheese between the ramekins. Mix the eggs, cream and milk together.
  • Pour into the dishes and sprinkle with basil.
  • Bake for 20 minutes.
  • Cut out bunny ears from the remaining 2 wraps. Brush these with a little oil and place on a baking sheet. Bake alongside the ramekins for the final 8 minutes until golden.
  • Remove from the oven and insert the ears into the quiche. Decorate with carrot for the bunnies’ nose, chives for whiskers and peas for the eyes.

EASTER CHICK PORRIDGE

Hearty, filling and oh so tasty, this is the most egg-cellent way to start your day – there’s an all important Easter egg hunt to prepare for after all!

MAKES: 2 SMALL PORTIONS

Ingredients

  • Porridge
  • 45g porridge oats
  • 275ml milk of choice
  • 1 small banana, mashed
  • ½ tsp vanilla extract
  • 2 tsp unsweetened desiccated coconut (optional)

Decoration

  • 4 strawberries, sliced
  • ½ mango, sliced
  • 2 blueberries

Annabel Karmel's Easter Porridge

Method

  • Measure the oats and milk into a saucepan. Place over a medium heat and bring to the boil, stirring all the time.
  • Add the banana, vanilla extract and coconut (if using) and continue to stir until the porridge has thickened and the oats are soft. This should take about 5 minutes.
  • Spoon into a bowl and use the fruit to make a chick to decorate the top.
